Slow Cooker Caribbean Pork

1 Boneless Loin (RAN 1210)
Olive Oil
Salt & Pepper
2 Cups Red Bell Pepper
6 Green Onions
3 Tbsp Hoisin Sauce
2 Tbsp Soy Sauce
1 Lime Juiced
2 Tbsp Creamy Peanut Butter
1 tsp Cumin
1/2 tsp Crushed Red Pepper
1 tsp Minced Garlic
1/2 Cup Chicken Broth
2 Tbsp Water
1 Tbsp Cornstarch


Cut pork loin into 1" pieces. Add oil to a large skillet and place over medium-high heat. Add pork and saute for 5 minutes or until browned. Season with a touch of salt and lots of ground pepper while browning. Place browned pork, bell peppers and 1/2" cut green onions in a slow cooker coated with olive oil. Combine hoisin sauce and next 7 ingredients, through garlic, in a small bowl. Pour chicken broth and hoisin mixture over the pork and veggies and stir well to combine. Cover and cook on high for 1 hour. Reduce heat to low and cook for 6 hours until pork is fork tender. Combine water and cornstarch and pour the mixture into the slow cooker. Stir to combine and turn the slow cooker on high for an additional 15 minutes to thicken sauce.
